I usually make the curd dip as accompaniment for the parathas, preparation method I have mentioned here. Ingredients
Dough
- 3 cup Wheat flour
- 1 cup Water
- 1 tablespoon Oil
Aloo Masala for Paratha
- 6 nos Potatoes
- 1 teaspoon Red Chilly Powder
- 1 teaspoon Chat masala
- 10 gram Ginger Chopped into tiny pieces
- 1 teaspoon Cumin Seeds Dry Roasted and powdered
- 1/2 teaspoon Garam masala powder
- 3 nos Green Chillies Chopped into tiny pieces
- 1/2 teaspoon Amchur
- 1 teaspoon Salt
- 1 cup Coriander Leaves
Curd Dip
- 4 cup Curd
- 1 pinch Salt
- 1 pinch Red Chilly Powder
- 2 leaves Coriander Leaves
Frying the Paratha
- 1 cup Oil

Aloo Masala for Paratha
- In a pressure cooker add the potatoes.
- Top it with water till the potatoes are immersed in water.
- Add some salt and cook for 2-3 whistles.
- Remove from fire and keep aside to cool.
- Transfer the potatoes from water to a plate and peel it when it is slightly warm.
- Mash the potatoes well without any lumps.
- Take the mashed potatoes in a large bowl and add red chilly powder, Garam Masala.
- Add Cumin powder, Amchur, Green chillies, Ginger, Coriander leaves and salt to taste.
- Mix well and adjust salt.
- Divide into 6 equal portions and keep aside.
Dough for Paratha
- Take Wheat flour in another vessel.
- Add salt and oil and mix well.
- Now add water and make a tight dough.
- Keep aside for 30 minutes.
- Knead the dough again so it becomes very soft.
- Divide this dough equally into 6 parts.
- Roll each separately into balls.
- Take a ball of the dough and place it on a rolling board and roller.
- Dust some Flour on the board and Roll into a small circle.
- Take the potato stuffing and place in the center of the paratha.
- Fold all sides so as to cover the Potato stuffing.
- Roll it again dusting flour so as to not stick to the rolling board.
- Heat a Non stick tawa add oil and slide the paratha on to the tawa.
- Cook on medium flame until you can see the bubbles on the paratha.
- Now you can flip the paratha on to the other side. Cook till it becomes a golden brown.
- Transfer to a serving plate.
- Repeat the steps with the remaining dough and stuffing.
Curd Dip
- Take curd in a serving cup.
- Sprinkle a pinch of red chilly powder, chat masala powder and some salt.
- Garnish on top with coriander leaves.
- Serve with paratha.
