Aloo Paratha
Aloo Parathas are made using Potato and wheat flour as the main ingredient with all spices in the required quantity according to ones taste. My children love this yummy parathas. I usually make the curd dip as accompaniment for the parathas, preparation method I have mentioned here. I also make parathas using mooli (Radish), Cauliflower, Panner (Cottage Cheese), Methi (Fenu Greek Leaves), MInced Meat, Minced Chicken etc. Each has got its distinct taste. Aloo Masala for Paratha
Curd Dip

Aloo Masala for Paratha
  1. In a pressure cooker add the potatoes.
  2. Top it with water till the potatoes are immersed in water.
  3. Add some salt and cook for 2-3 whistles.
  4. Remove from fire and keep aside to cool.
  5. Transfer the potatoes from water to a plate and peel it when it is slightly warm.
  6. Mash the potatoes well without any lumps.
  7. Take the mashed potatoes in a large bowl and add red chilly powder, Garam Masala.
  8. Add Cumin powder, Amchur, Green chillies, Ginger, Coriander leaves and salt to taste.
  9. Mix well and adjust salt.
  10. Divide into 6 equal portions and keep aside.
Dough for Paratha
  1. Take Wheat flour in another vessel.
  2. Add salt and oil and mix well.
  3. Now add water and make a tight dough.
  4. Keep aside for 30 minutes.
  5. Knead the dough again so it becomes very soft.
  6. Divide this dough equally into 6 parts.
  7. Roll each separately into balls.
  8. Take a ball of the dough and place it on a rolling board and roller.
  9. Dust some Flour on the board and Roll into a small circle.
  10. Take the potato stuffing and place in the center of the paratha.
  11. Fold all sides so as to cover the Potato stuffing.
  12. Roll it again dusting flour so as to not stick to the rolling board.
  13. Heat a Non stick tawa add oil and slide the paratha on to the tawa.
  14. Cook on medium flame until you can see the bubbles on the paratha.
  15. Now you can flip the paratha on to the other side. Cook till it becomes a golden brown.
  16. Transfer to a serving plate.
  17. Repeat the steps with the remaining dough and stuffing.
Curd Dip
  1. Take curd in a serving cup.
  2. Sprinkle a pinch of red chilly powder, chat masala powder and some salt.
  3. Garnish on top with coriander leaves.
  4. Serve with paratha.
