Egg masala is a nutritious side dish to be eaten with rice, appams or rotis

  1. In a vessel add water and eggs and boil for 10 minutes.
  2. Cool and remove shell.
  3. Cut into half lengthwise and keep aside.
  4. Slice the onions and keep aside.
  5. Cut tomatoes into small pieces and keep side
  6. Heat the oil in a pan.
  7. Add onions and salt and fry till it turns translucent.
  8. Add curry leaves. Fry for a minute.
  9. Add the chilli powder, coriander powder, Turmeric powder and garam masala.
  10. Fry for about 5 minutes on low flame.
  11. Add tomatoes fry till tomatoes cook and gets mashed well.
  12. Add the eggs, add salt if required.
  13. Mix gently allowing the masala to coat the eggs. switch off the flame
  14. Egg masala is ready to serve.
